Chocolate Chip Orange Drop Cookies



When I was younger we had a dear family friend who we pretty much adopted as a third grandmother.  Jane was a sweetheart and an artist.  She painted beautifully, but she also baked.  She loved it when we came to visit her. She remembered our birthdays and would bring us a batch of these cookies to keep in our freezer.

I love that whenever I eat or make these cookies, I think of Jane.

Chocolate Chip Orange Drop Cookies

Ingredients:

2 1/4 c. flour
1/2 tsp. salt
1 c. shortening
1 c. sugar
3 oz. cream cheese {softened}
2 eggs
4 tsp. orange juice
3 tsp. grated orange rind
6 oz. mini semi-sweet chocolate chips

Directions:

Preheat oven to 350*F.

Cream together shortening, sugar and softened cream cheese.  Add eggs and orange juice.  Mix well.  Next add flour and salt and mix until a creamy dough is formed.  Then add orange rind and chocolate chips and stir until incorporated.

Drop dough by tablespoons on greased cookie sheet and bake for 12 minutes.  Cool and frost with orange cream cheese frosting.  

Store in air-tight container in the fridge for ultimate freshness.

Note: these cookies freeze very well once baked and frosted.
Orange Cream Cheese Frosting

Ingredients:

2 c. powdered sugar
3 oz. cream cheese
1 tsp. orange juice
1 Tbsp. orange rind

Directions:

Cream powdered sugar and cream cheese together, slowly adding powdered sugar until well incorporated.  Add orange juice and orange rind and beat well.

p.s. Saturday was Marta's mini moving sale.  I didn't think it was possible to make a yard sale "cute", but leave it to Marta to accomplish the impossible.  She had balloons on the doors, purses pinned to the walls, a full length mirror for trying on clothes, cute bakers twine tied around dishes to keep them together, handwritten price tags... the details were endless.  She also had a goodies table complete with cookies and cucumber limeade.  I brought a couple plates of these yummies to add to the table. Now that I look back on it, we totally should have charged for them. :)

  5. Orange & chocolate is one of my favorite flavor combos. These look way good!

    So sorry about your good friend moving away! Change is always so hard, but maybe you'll be joining her sometime soon! ;) Who knows where life will lead.
